My mother made a heavenly peanut butter fudge that I've never been able to duplicate no matter how many recipies I try. She did not use a recipe for a great deal of her cooking but seemed to have memorized every cookbook she read. Her mother was a chef in a small hotel and she probably learned from her,

Not for me! because I've been allergic since I was a kid...Came close to starring with The Reaper in "It's never to early to die" back in 4th grade when the new kid in my class decided to play a joke on me and switched his Peanut Butter and Jelly sandwich with my Jelly sandwich...Needless to say after the second bite and my simultaneous transformation to 'Puffy Face Boy' and a trip to the nurses office giving way to the hospital and some shots as I recall of epinephrine that in that instant became the origin of my peanut allergies...and thus of,all things peanut became the Kryptonite to my Clark Kent. Or utilizing a secondary analogy because he's my favorite Superhero..The Joker to my Batman..." There..Ha...

With Jelly.... while also taking into account the fact that I was 10yrs old then which (and I'm going to go out on a limb here..) probably placed a high probability in going in for the second bite as being puzzled by what was running across my palate in the first.." These queries of yours are bone deep and mesmerizing...Once I get the final plans patented on my time machine I will go back to 1978 to the Lunchroom at P.S.244 after the contents of my Scooby-Doo lunch Box was tampered with followed by the now infamous 2 bite question..You have my word..And I'll be sure to ask myself why a second bite was taken,it should be epic query..."

If you seldom - or never eat a specific thing, you "forget" what it tastes like - and may not have instant recognition of it.
I detest onions, so never eat them - except for the occassional times they accidentally appear in my food. I'll take a bite and notice that it tastes odd, and if I take pause - or (ick!) take another bite - I will find the flavor to be exceedingly unpleasant. I will spit out whatever is still in my mouth . . .and THEN connect the taste to the name/identity.
[ It's something like not seeing someone for such a long time that you do not identify them at the first glance - and it takes a moment to recall who they are. ]

The only thing I don't like about these particular recipes is that most of them contain a lot of sugar in the form of honey, etc.
There are many more healthy recipes using peanut butter without chocolate or other more fattening ingredients. Just do a web search. I make a peanut butter ball mixed with mashed chickpeas and even feed this to my dogs.

I wasn't talking about allergies.  I was talking about all the children that died from salmonella last year because of the filthy conditions at peanut plants.
