No-Carb No More! Why Bread Bans Are Losing Popularity

Not many things in this world smell better than a loaf of fresh bread. However, in recent years, dieters turned their noses up at bread because it's the ultimate carbohydrate-containing food — the one everyone thinks of when they hear the word "carbs." Carbs were tabbed as a culprit behind expanding waistlines. Trend followers found the next best things to sliced bread, using lettuce leaves for taco shells and ordering burgers without buns. But now, bread is seeing a new popularity.

Beyond the Bread Ban
Sure, the low-carb and no-carb diets were popular, but they were very difficult to follow for any length of time. Essentially, low-carb diets worked because they often cut calories. And if you take in fewer calories — regardless of where the calories come from — you'll lose weight. Carbs still get a bum rap, though. "When you take away the carbohydrates, it's like taking away water from someone hiking in the desert," says Judith Wurtman, PhD, an MIT researcher who has studied the relationship between food and mood for the past 20 years. "If fat is the only alternative for a no-carb or low-carb dieter to consume to satiate the cravings, it's like giving a beer to the parched hiker to relieve the thirst — temporary relief, but ultimately not effective."

Staging a Comeback
"Clearly the anticarb craze is over," says Mani Niall, known as the chef to the stars, author of Sweet & Natural Baking and Covered in Honey, and founder of Mani's Bakery in Los Angeles. "Many bread-theme food chains have opened, and at bakeries, I've heard bread sales have increased by as much as a third recently."

Here are smart ways to help put bread back into your diet.

  • Go for whole grain. Choose bread products that list whole grain as one of the first few ingredients on the label — such as "whole wheat," "whole grain oats" or "whole rye." You can't go by color — bread can be brown because of molasses or other added ingredients. Your goal should be to eat three servings daily of foods made with whole grain, amounting to at least 48 grams of whole grain.
  • Keep it fresh. If you prefer fresh breads, Niall has a simple secret for keeping it fresh longer. "Split the loaf in two. Put one half in the freezer and eat the other. It'll keep for weeks in a freezer without being harmed."
  • Broaden your bread horizons. "You can find an amazing variety and new tastes," Niall says. "There are a lot of textures and a whole spectrum of grains to try. I specifically recommend spelt."
  • Top with flair. "Along with dipping it in a little olive oil, honey, or tomatoes, bread made with creative toppings can be livelier and have more moisture," says Niall. Try serving bruschetta-topped bread with sautéed greens and a touch of low-fat cheese, or layer pear slices with a bit of feta cheese and a drizzle of honey.
  • Navigate the menu. Smart choices for bread when you're on the run include honey multigrain baguettes, whole wheat bagels or bagels made with whole grain, seven-grain rolls, sprouted whole wheat bread and oatmeal bread.

I never went for the "carb free" craze as far as bread is concerned, funny how these crazes come along every so often. I love homemade bread and have always enjoyed making and eating it. I say everything in moderation folks.

I cute out white processed carbs and most processed foods, added more veggies and fruit to my diet with whole grains and good quality meats and lost over 150 pounds. I still eat bread, but usually make it myself in my breadmaker with high quality whole grain flours. It's significantly more delicious than anything that can be bought in a store that can sit on a shelf for weeks without going bad and much healthier.

Never could lose much weight or keep any of it off until I cut processed carbs from my diet (that means bread). When I ate carbs I was always hungry and craving more. Eating protein, nuts, fruits and vegetables fills me up and keeps me full until it's time for my next meal. I've lost 27 pounds and kept it off for over a year. I don't miss all the pasta and bread either.

You wanted to know if anyone swore off carbs, Well, I did, in 2002. Not all carbs of course, everything has carbs, including a tomato, but I did not eat simple carbs for a year or so (I did eat complex carbs, like lentils for example). I had been going to the gym for several months but only when I dropped the carbs did the weight come off. I reached 122 lb, a good weight for me. Alas, I regained it in 2005-2008 because I was laid up by broken bones in 3 accidents, but I know that exercise and avoiding simple carbs works for me.

Small portions and real ingredients is key. Americans love to eat huge portions of fake food....that's what causes obesity...as well as taking the elevator.

I think that bread gets a bad rap and is blamed for people's laziness. Granted, the ingredients in most breads on the market isn't what was in them 100 years ago. Even still, my cousins lived on Wonder Bread and PB and J in the 70's. I look at their pictures and they were super skinny. The difference is that they were actually outside playing and burning off all those calories. Today, you can stay inside and play video games. Not only that, you don't even have to walk to your friends house for some two player action because you can play with him online. Todays kid can eat his calorie loaded PB and J, while playing Madden with his buddy, and never leave the house.

Whole grain bread is still high in carbs. People think they can eat more of it and escape the weight gain. Yet they don't excercise any more to burn it off.

The reason bread is making a comeback is because people have low willpower. Getting fat is also making a comeback.

A note on freezing bread -- don't freeze bread with flaxseeds in it.

It will taste like linseed oil.

"WHY BREAD BANS ARE LOSING POPULARITY" - cuz bread tastes goood!

You can eat all the carbs you want, but you know what? Ya gotta turn off the X-Box, Tubby, get your flabby butt outside and play some frisbee! That's all. Jump rope! Bloody skip, fer pete's sake, but move! Think of all the things you can do where you can't HELP but smile while you're doing them?

Scratch a dog's rump until he does that thumping foot thing (probably burns 1-2 calories per minute). If you have the means: hang on to a speeding jet ski (maybe another 120 per hour or more depending on the balancing and the gripping. Think about it, though: there are 2 things that will MAKE you smile. You can't NOT smile while doing them... and you're burning calories.

I bake my own bread (for almost 8 years), and few things taste better than a fresh, warm loaf of any kind of bread product.

But you need to sweat.
