  • 1 cup crushed rich round crackers
  • 2 cups cooked rice
  • 1 1/2 cups frozen peas
  • 1 can (10.75 oz) condensed 98% fat-free cream of chicken soup
  • 1 can (10.75 oz) condensed fiesta nacho cheese soup
  • 1 can (14.5 oz) fire-roasted tomatoes and green chilies
  • 1/2 cup fat-free milk
  • 1/2 teaspoon crushed red pepper (optional)
  • 1/2 cup shredded cheddar cheese (2 ounces)

  • Preheat oven to 350 ºF. Place chicken in the bottom of a 13x9x2-inch baking dish or 3-quart rectangular casserole. In a large bowl, combine broccoli, rice, and peas.
